Chocolate Chip Granola Bars

  • 6 tablespoons coconut oil
  • 1/4 cup dark brown sugar
  • 1/4 cup honey
  • 1-1/2 teaspoons vanilla extract
  • Heaping 1/8 teaspoon salt
  • 2 cups instant oats
  • 1-3/4 cups crispy rice cereal
  • 1/2 cup finely sliced almonds
  • 1/4 cup flax meal
  • 1/3 cup mini chocolate chips or more if desired
  1. Line a 9 x 13-inch baking pan with aluminum foil. Spray the foil with coconut oil spray.
  2. In a large pot, combine butter, brown sugar and honey. Bring the mixture to a boil over medium-high heat, stirring constantly.
  3. Lower the heat and simmer the mixture until the sugar dissolves and the consistency is slightly thickened, about 2 minutes. Next, remove the pan from the heat and stir in the salt and vanilla.
  4. Next, add the oats, rice cereal, almonds and flax meal (or wheat germ) and fold with a rubber spatula until thoroughly mixed.
  5. Pour the mixture into your greased, foiled pan with your rubber spatula. Use the spatula to gently press the mixture down so it is even in the pan.
  6. Let mixture cool. Next sprinkle and press the chocolate chips on top of granola mixture with a spatula.
  7. Cover pan with foil and refrigerate for 2 hours.
  8. Remove from the refrigerator and cut into rectangles.

Finished butter, brown sugar and honey mixture.
